Long storing because of tight paper wrapper helps keep longer. Skin becomes easier to peel the longer they’re stored. Beautiful deep purple coloring.
Rich earthy flavor, mellowing when cooked. Quick heat that dissipates fast. Sweetest garlic especially when roasted.
