If you love garlic, then you've got to try garlic scapes.
Garlic scapes are the long green shoots that grow from the garlic bulb, and they are an amazing way to add garlicky flavor to your favorite dishes.
They're a bit milder than garlic cloves, which makes them the perfect base for pesto, an addition to quiches, or even eaten straight up sautéed with a little salt.
They are so versatile, for all you culinary needs and so many ways to preserve them. One of our favorite is scape pesto and scape humus but you can also, simply chop and freeze or dehydrate and blend in powder. They are delicious grilled on the BBQ or in a stir fry. Scapes are only available in June, so get them while they are fresh.
